GLUTEN FREE HIGH FIBRE LOAF RECIPE PAGE


Original

RECIPE:

  • 400g of pre-mix
  • 1 Cup Water
  • 4 Tbsp Olive Oil
  • 2 Tbsp Apple Cider Vinegar
  • 1 (140-160g) Apple, skins ok, blended
  • 2 Eggs***

*** Option to omit the eggs for a slightly denser bread with better hold and moisture retention.

1) Pre-heat the oven to 180°C and take out as many loaf pans as you will need. Smaller loaf pans yield a taller loaf whilst larger loaf pans produce a shorter loaf;

2) Use a food processor or a bullet-style blender to blitz up the apple, oil, vinegar, water until smooth;

3) If adding eggs, add them now and blitz in for only second or two;

4) Weigh 400g of the loaf mix. Add in any variation flavours you wish to use. (see reverse)

5) Combine the wet with the premix ingredients and stir quickly but ONLY JUST until the last little bit of flour has been moistened into the wet. Mixing any longer can result in denser, heavier loaves;

6) Transfer immediately into a loaf pan to preserve as many bubbles as possible. Bake straight away for 45- 50min. uncovered for a crustier loaf or covered (leave room for it to rise) for a softer crust;

7) Wherever possible, let this loaf sit before cutting into it for at least 20min. out of the oven just in case the middle has not fully finished setting;

8) This loaf slices well and freezes well pre-sliced. It tastes amazing fresh out of the oven and delicious still once cool, a personal preference is warmed/ toasted in the toaster first.


Olive and Thyme Loaf

As per original recipe:

+Add . ⅔ C sliced olives

+ 2 Tbsp fresh Thyme leaves, . tsp powdered, or 1 tsp dry leaf


Herb & Garlic Loaf

As per original recipe:

Add . C finely chopped fresh herbs (basil, oregano, parsley,chives, dill, thyme)

+ 1-2 Cloves garlic, pressed and mixed first through wet ingred.


As per original recipe:

Add 1 tsp Rosemary powder or 1 Tbsp minced fresh leaf

+ 1/3 Cup Parmesan cheese, grated fine

Rosemary Parmesan Loaf


As per original recipe:

Add 1 C dried fruit of choice (sultanas, diced apricots, dicedfigs, currants, cranberries, etc.)

+ 1 Tbsp Cinnamon powder

Fruit Loaf


As per original recipe:

Instead of Apple, Add 2-3 Bananas, very ripe and well mashed

+ 2 tsp Cinnamon powder

+ 1 tsp Ginger powder or 1/2 tsp nutmeg or allspice

+ 1-2 tsp Vanilla

+ 3 Tbsp Coconut Sugar (optional) or 5 Medjool dates chopped or blended
